I'm not sure if you'd classify most of these "items", but I thought these things should be listed somewhere here, so here they are. :) I consider items pretty much anything that is helpful to Donkey and Diddy.

Barrels
Description
 
Animal Buddy Crate
You will see these in some levels. They will contain an animal buddy, just jump on it to brake it open. You can see what animal buddy is inside by the picture on the crate, Rambi is in the one shown to the left.
 
Animal Buddy Token
Animal Buddy Tokens are scattered all around the game.Hidden around levels, in bonus areas, are sometimes just plain in the open. Each animal buddy (except Squawks) has their own token. Collect 3 of the same type of token and be brought to a bonus game. Where you play as that animal buddy. Run, or swim around to collect hundreds of mini tokens. Every hundred you get, gives you a life.
 
Balloon
Find these in various levels and in bonus rooms. Get it and simply get an extra life. There's one in DK's house. So when you first start the game, just jump back there and get it. :)
There are also green a blue balloons worth more lives.
 
Banana
These are in every level but Boss levels. They are just spread around, even in bonus rooms. Collect 10 bananas and get an extra life.
 
Banana Bunch
Like the single banana but worth 10. These aren't as common as the single banana, but still pretty well found. Many times they are placed in a harder to get place, such as making you do a cart=wheel jump in a hole and out to get it.

Fuel
See these fuel containers in "Tanked Up Trouble"
Jump on a moving platform and make you way across a set track. But this moving platform requires fuel to go on, and it shows on it how much it has. If it runs out, it falls of the track. So collect these fuel cans to stay going. The cans show how much fuel are in them by the amount of red dots on it.

KONG
These are in every level but the boss levels. Each letter is spread out through-out, starting with K and ending with G.
Try and find and get them all, and you'll get an extra life.
Sometime they are easy to get, sometimes some are hard to get and find. They can also be in bonus rooms.

Tire
This tire can be very helpful, found in a variety of levels. Push it around and use it to get to high up areas, enter bonus room barrels, and to jump high and land on a patch of ground to reveal something.
